The offer equals the current probability of the slip winning multiplied by the potential return, minus the operator's margin. That margin is why cashing out every slip lowers the long-run return: each exit pays a little less than fair value.
Choose a threshold in advance, for example cash out a multi-leg slip when the offer exceeds 80% of the potential return and only one leg remains. Deciding during the match, with the score moving, is where most poor cash-outs happen. Partial cash-out lets you lock part of the slip and leave the rest running.
